Our house-made pastas are made daily right in the heart of Minneapolis. Since 1982, Broders’ has supplied local restaurants and home cooks with our fresh pasta. Throughout the years, our team has continued to use time-honored techniques and traditions straight from Italian kitchens to bring you the most authentic fresh pasta in the Twin Cities.

Stringozzi
Stringozzi comes from the word ‘strenghe’ which means shoelace. This is a thicker style spaghetti that is typical of the Umbiran reion in Italy. An eggless pasta, this is our only vegan pasta made in house! The eggless and thicker nature of this pasta creates a perfect al dente texture or a stronger “bite.”
Suggested Sauce Pairings: Pestos or a simple fresh pomodoro.

Tagliarini
This pasta is made with just egg yolk. Richer in color and flavor than your usual egg pasta. It’s said to be cut like ribbons, ‘talia’ which means cut in Italian is the difference between tagliarini and other pastas.
Suggested Sauce Pairings: Rich cream sauces and hearty red sauces.

Quadrucci
A 4-sided pasta - (quad = four) with scalloped edges. Similar to one side of an unfilled ravioli.
Suggested Sauce Pairings: Lighter cream sauce with bright acid. White wine with alfredo butter.

Linguine
Our classic house made linguine. Linguine, meaning little tounges is a pasta shape that comes from the region of Liguria.
Suggested Sauce Pairings: Pestos, rustic earthy sauces.

Fettuccine
Meaning “little ribbons”, Fettuccine is a famous and classic pasta has been made for centuries, making it harder to pin point it’s exact origins. We do know that it is delicious!

Egg Pasta Sheets
Our egg pasta sheets come in two varieties: classic egg & spianch & egg. Both can be used with Broders’ signature sauces and ingredients found in our store to recreate our famous Lasagnas! Stop in to pick up your own recipe card.

Spinach & Egg Pasta
Our spinach & egg pasta can be found in three cuts: Linguine, Pappardelle and Fettuccine. The spinach is addd into the dough and creates a lovely hint of earthy flavor when cooked!
