The Four Icons of the Roman Table

Long before it was served on white tablecloths in restaurants around the world, Cacio e Pepe was a shepherd’s staple - the supper of herders moving their flocks through the hills around Rome. They carried what wouldn’t spoil: dried pasta, black pepper, and Pecorino Romano made from their own sheep’s milk.
