“Today the Flamigni production plants are located on the slopes of the hills between Forlì and Predappio and extend over an area of ​​over 12,000 square meters. All Flamigni specialties are created here, starting from Panettone in all its variations, up to the Nougat and the refined tea and rustic pastries.

In addition to the sophisticated equipment for the semi-artisanal processing of dry pastries, the jewel in the crown of the Forlì factory are its fourteen Somarè nougat makers from the 1950s, with hand-hammered copper boilers, kept in perfect conditions of use, which constitute the ideal equipment for long and accurate bain-marie processes. The Forlì factory produces leavened products for special occasions: Panettoni and Colombe. Among other equipment, the plant uses three San Cassiano plunge-arm mixers for slow processing, completely identical to those used by artisan pastry chefs. The shaping, i.e. the cross cut on the surface of the panettone, is done manually, as in the past.Once out of the oven, the leavened products are turned over by hand and they cool to room temperature in at least twelve hours.”
